本文研制了以海带为主要原料,添加食盐、生姜、白糖为辅料的一种复合调味料。该产品利用海带成本低廉、营养价值高的特点,得到一款经济健康、方便快捷且具有浓郁海带味的复合调味料。通过析因设计实验确定海带干燥工艺参数。单因素确定辅料添加水平,通过正交实验得出海带风味复合调味料的最优配方。

In this paper, a kind of compound seasoning with kelp as main raw material, adding salt, ginger and sugar as auxiliary material was developed.The product is an economical, healthy, convenient and quick compound seasoning with fresh flavor,which has the advantages of low cost, rich function and high nutritional value.1.The drying process parameters of kelp in kelp seasoning were determined by factorization design experiment.Single Factor experiment to determine the level of additives,the optimal formula of kelp flavor compound seasoning is obtained through orthogonal experiment.
