四川小吃钵钵鸡调料产品质量执行GB 31644-2018《食品安全国家标准 复合调味料》标准,该标准中未将酸价、过氧化值列入其中且未作限量要求。本文采用精密度高、适用范围广、颜色干扰小的电位滴定法测定复杂油状基体调料-钵钵鸡调料中酸价和过氧化值含量。开展了有证标准物质CFAPA-QC201919D-3和CFAPA-QC610B-2分析验证试验、方法精密度和加标回收试验,并将测定结果与手工滴定进行了比较。结果显示:酸价和过氧化值测定值与标准值基本一致,相对误差分别为-1.92%和-4.08%,酸价和过氧化值的加标回收率分别为91.3%~105.8%和91.8%~104.1%,样品分析中酸价和过氧化值的RSD分别为1.52%~5.67%和1.79%~6.98%;电位滴定法与传统的手工滴定法检测结果无显著性差异,建立的方法有较高的准确度、精密度和重复性,为快速测定该类调料酸价和过氧化值含量提供一条途径;以建立的方法对四川某地大超市、农贸市场、销售点、小吃店等30个批次钵钵鸡调料酸价和过氧化值含量进行检测,结果表明样品中酸价和过氧化值存在偏高甚至超标的风险
Abstract:
Sichuan bowl of chicken seasoning product quality is subject to GB 31644-2018 "National Standard for Food Safety Complex Seasoning" standard, which does not include acid price and peroxide value and does not set limits. A potentiometric titration method with high precision, wide application range and little color interference was used to determine the content of acid value and peroxide value in the complex oily matrix condiment of Sichuan Pobo chicken. The CFAP-QC201919D-3 and CFAP-QC610B-2 certified reference materials were tested for analytical verification, method precision and label recovery, The results showed that the measured values of acid value and peroxide value were basically consistent with the standard value. The relative errors were -1.92% and -4.08%, respectively. The standard recovery rates of acid value and peroxide value were 91.3%~105.8% and 91.8%~104.1%, respectively. There was no significant difference between the potentiometric titration method and the traditional manual titration method. The established method had high accuracy, precision and repeatability, providing a way for the rapid determination of acid value and peroxide value of this kind of spices. By means of the established method, the content of acid price and peroxide value of 30 batches of pobo chicken seasoning in a supermarket, farmers’’’’’’’’ market, point of sale and snack shop in Sichuan was tested. The results showed that the acid price and peroxide value of the samples were on the high side and even exceeded the standard.
